Coconut Almond Bars

It's 5pm, and you just got off work - or it is 6am, and you are headed out. You want to go to yoga or pilates but just don't have the energy. NOT ANYMORE! These bars are easy to make and the perfect on-the-go snack. They take a maximum of 30 minutes to make.

Ingredients

1/2 cup honey

 

 

 

 

1 generous pinch of salt

 

 

 

 

1 tsp vanilla

 

 

 

3/4 cup of raw, lightly toasted almonds

 

 

 

3/4 cup raw, lightly toasted cashews

 

 

 

 

 

1 1/2 cup unsweetened, lightly toasted coconut flakes

 

 

 

                               3 tbsp water

 

Directions

1. Heat the honey, water, and a pinch of salt, on med-low heat for about twenty minutes

2. Lightly toast the nuts and coconut in a pan while the honey is heating.

3. Once the honey is done, stir in the toasted nuts and coconut mixture.

4. Place on a  parchment lined baking dish, and flatten with a spatula.

5. Let it sit at room temp for 45 minutes.

6. Flip out of the pan onto a cutting board.

7. Cut into whatever size bars you want.

8. Enjoy!
